Ingredients for 1 servings:
- 750 g flour
- 1 cube of yeast
- 1 tsp sugar
- 200 ml milk, lukewarm
- 200 ml water, lukewarm
- 125 g butter
- 4 large onions
- 200 g cheese (sliced cheese)
- 4 tsp peppercorns, green, freeze-dried
- 6 tbsp breadcrumbs
- 800 g minced meat, mixed
- Flour for the work surface
- 1 egg yolk
- 2 tbsp sweet cream
- Sesame seeds for sprinkling
- Poppy seeds for sprinkling
- Caraway seeds for sprinkling

Prepare yeast dough as usual from flour, yeast, sugar, milk, water, and butter and let it rise until doubled in size. For the filling, finely dice the peeled onions and semi-hard cheese. Crush the peppercorns with a heavy knife or in a mortar. Mix them with the breadcrumbs into the minced meat and season with salt if desired. Knead the yeast dough again on a floured work surface. Divide in half and shape each half into a log with floured hands. Divide each log into 12 equal pieces and roll them out into flatbreads about 12 cm in diameter. Place some of the filling in the center. Pull the dough over the filling and shape each flatbread into a round shape with floured hands. Place the resulting rolls on a baking sheet lined with baking paper. Whisk together the egg yolk and cream. Spread the mixture over the rolls, then sprinkle with sesame seeds, poppy seeds, or caraway seeds, if desired. Let them rise for 10 minutes in a preheated oven at 50°C, then bake for about 25 minutes at 200°C. Tip: The rolls will rise especially well if you place a cup of water on the bottom of the oven.
