Happy Buns

The perfect happy buns recipe with a picture and simple step-by-step instructions.

  • 350 g Wheat flour 550 + more
  • 200 g Wheat – whole grain meal
  • 10 g Fresh yeast
  • 5 g Salt
  • 1 tbsp Flowerhoney
  • 60 ml Sunflower oil
  • 250 ml Milk, lukewarm
  • 0,5 tsp Barley malt extract
  1. Take a mixing bowl (food processor) and add wheat flour, whole wheat meal, crumbled fresh yeast, salt, blossom honey, barley malt extract and sunflower oil. Then pour the lukewarm milk on top and use a hand mixer (food processor) to mix everything into a smooth dough.
  2. Take the bread roll dough out of the bowl, if it should stick a little, add some of the wheat flour. I divided the dough and weighed it into 100 gram pieces, you can see that in my picture. Then knead and shape the divided pieces again by hand.
  3. Flour the work surface again and flatten the shaped dough pieces. Take a roll form (Smiley`s for me) and press in this pattern. Then line a baking sheet with parchment paper or, as I did, grease a magic stone with rapeseed oil and place the “happy rolls” on it.
  4. Cover the whole thing and place in a warm place where the dough pieces can RISE for about 1 hour. In the meantime, heat up the oven to 200 ° degrees top / bottom heat. When it has reached the baking temperature, place the baking sheet or magic stone on the 2nd rail from the bottom.
  5. Now the whole thing is baked for about 20 minutes. Then take it out of the oven and let it cool down on a rack. Later put in a bread basket for further consumption.
