Sweet pastries, perfect for children’s birthdays, celebrations, etc.
Combine the quark, egg, vanilla sugar, milk, oil, salt, and sugar in a mixing bowl. Mix using the whisk of a hand mixer. Add the flour and baking powder and knead with the dough hook of a hand mixer until a smooth dough forms. With well-floured hands, form the dough into approximately 15 small oval rolls (I find approximately 7 x 3 cm is ideal). Pinch the dough with well-floured fingers to pull up the ears. For the mouse tail, form a thin roll of dough, tuck it under the mouse’s bottom, and place it on the mouse’s back. Place the mice on baking sheets lined with baking paper and bake one after the other in an oven preheated to 150°C (convection oven) for approximately 15 minutes. Remove the mice from the oven and brush with egg. Then bake for approximately another 10 minutes at 100°C (convection oven). Let the mice cool on a wire rack. Draw on the eyes and mustaches with icing sugar and decorate the body with powdered sugar. Tip: Don’t shape the ears and tail until all the rolls are finished, otherwise they’ll disappear completely during baking.
