Ingredients for 4 servings:

  • 250 g rice (basmati rice)
  • 50 g raisins
  • 50 g pine nuts
  • 6 spring onions
  • 500 ml water
  • 1 tsp coriander powder
  • 1 tsp cumin
  • 1 tsp harissa
  • 1 tbsp olive oil
  • possibly butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Rice dish with pine nuts, spring onions and raisins

Finely slice the spring onions. Heat the olive oil in a saucepan, briefly roast the spring onions, rice, raisins, and pine nuts while stirring. Season with coriander, cumin, and harissa, and add water. Season with salt and pepper and simmer for 10 minutes, stirring occasionally. Let stand for another 10 minutes. Season again with the spices before serving, adding more salt if necessary, or stirring in a knob of butter. This dish goes perfectly with lamb chops, scampi, or a beef steak. It’s also delicious on its own!
