Ingredients for 3 servings:
- 1 onion(s)
- 15 juniper berries
- 1 sprig(s) of thyme
- 1 sprig(s) rosemary
- 1 tbsp white pepper, crushed
- 1 tbsp black pepper, crushed
- 2 bay leaves
- 2 chili peppers, hot
- ¾ liter olive oil
- 400 g Harzer cheese
Instructions

For this recipe, I use Mini Harzer cheese. Each package contains 5-8 pieces. If you want the regular-sized Harzer cheese, cut it into eight smaller pieces. Place the Mini Harzer cheese in 200 ml screw-top jars. Add the other ingredients, adjusting the quantities according to the jars used. Pour olive oil over everything. Close the lid and store the cheese in a cool, dark place for 1-2 weeks. It’s perfect with any snack.
