Ingredients for 4 servings:

  • 500 g potatoes, peeled and coarsely grated
  • 1 medium-sized egg(s), whisked
  • 1 medium-sized onion(s), peeled and cut into small cubes
  • some rapeseed oil or sunflower oil for frying
  • Salt and pepper, black, ground

English breakfast potato pancakes

Place the coarsely grated potatoes in a kitchen towel, fold the towel over the potatoes, and twist both ends together until the liquid stops coming out. In a bowl, mix the grated potatoes with the diced onion, the beaten egg, a generous pinch of salt, and some freshly ground pepper. Heat the oil in a large frying pan. Drop in the batter in batches with a large spoon and press down slightly to form 1 cm thick fritters. Cook for 3-4 minutes on each side over medium heat until crispy and golden brown. Serve on its own for breakfast or as a side dish with fried eggs and bacon.
