Ingredients for 2 servings:

  • 5 potatoes
  • 4 eggs
  • 4 slices of salami or ham
  • 1 onion(s)
  • 2 garlic cloves
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

First, boil the potatoes. In the meantime, chop the onions, garlic, and salami or ham and fry them in a pan. Whisk the eggs in a cup (use 2 or 3 per serving, depending on your appetite). When the potatoes are cooked, slice them and add them to the pan with the other ingredients. Don’t overfill the pan. Turn them over occasionally. When everything is nicely browned, transfer everything to one half of the pan and pour the beaten egg over it. The egg will now also run into the empty half of the pan. Once the egg is set, use a spatula to crack the “egg-only” half over the “full” half and place everything on a plate. Finally, garnish with some greens, if desired.
