Hasselback potatoes

Ingredients for 6 servings:

  • 12 potatoes, beautiful
  • 6 tbsp milk
  • 1 tbsp butter
  • 2 tbsp olive oil, good
  • Sea salt, coarse
  • 1 sprig(s) rosemary
  • possibly garlic

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Wash the potatoes thoroughly. Place them on a board and score them finely (not all the way to the bottom; if you prefer, you can also place a wooden spoon against the potato to ensure that nothing seeps through). Gently heat the milk and butter and briefly lower the potatoes into the lukewarm mixture. Place them on a baking tray and drizzle with olive oil. Bake at around 200°C using top/bottom heat for about 1 hour until they are nice and crispy. Add the rosemary and garlic (if desired) to the tray. Add the salt to the potatoes just before serving, as salt is known to absorb water and the potatoes become mushy otherwise. They go wonderfully with a fresh salad, herb quark, or they are also perfect as a side dish. If you like, you can also fill the potatoes with some cheese and/or ham/bacon.
