Hawaiian-style chicken breast fillet with exotic sauce

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 1 egg(s)
  • 1 mango(s), fresh (alternatively from a can, but then unsweetened)
  • 1 can pineapple, unsweetened
  • 1 tbsp curry powder
  • Salt
  • Cayenne pepper
  • Ginger
  • Desiccated coconut

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Coat the chicken breast fillets in the desiccated coconut, then fry them in a pan on both sides. Brown the mango and pineapple in a pan with a little hot oil, add the pineapple and mango juice (if canned), and season with curry powder, salt, and the other spices to taste. It might taste a bit sour, but don’t add any sugar; instead, maybe add a little vegetable stock. Let the sauce simmer slightly, checking the seasoning occasionally. Serve on plates and immediately. I recommend serving with rice.
