Hazelnut – Cherry Clusters

Ingredients for 1 servings:

  • 120 g butter
  • 120 g powdered sugar
  • 1 egg(s)
  • 1 pinch of salt
  • 180 g flour
  • 150 g hazelnuts, ground
  • 25 cherries (Amarena) from the jar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Whisk together the softened butter, powdered sugar, and egg yolk until fluffy. Knead in the salt, flour, and 75g hazelnuts. Whisk the egg whites in a small bowl until fluffy. Transfer the remaining hazelnuts to a second small bowl. Form the dough into balls about 1.5cm thick. Dip them first in the egg whites, then in the nuts. Place each ball, one at a time, on a baking sheet lined with baking paper, gently flatten with your thumb, and make a small indentation with your finger. Preheat oven to 180°C. Halve the drained cherries and arrange them among the indentations. Bake for approximately 12-15 minutes until light brown. Let cool on a wire rack.
