Hazelnut croissants

Ingredients for 4 servings:

  • 250 g flour
  • 1 pinch of baking powder
  • 100 g sugar
  • 1 vanilla pod(s), scraped pulp
  • 200 g butter, cold
  • 3 egg yolks
  • 125 g hazelnuts, ground
  • 50 g dark chocolate

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180 degrees Celsius. Line two baking sheets with baking paper. Sift flour and baking powder into a bowl. Add sugar and vanilla seeds. Cut the butter into pieces. Add it to the flour along with the egg yolks. Sprinkle with the nuts. Knead everything with the dough hook of a hand mixer until a crumbly dough forms. Then knead with your hands until a firm dough forms. Divide the dough in half. Form each half into a 3 cm thick roll. Cut approximately 1 1/2 cm thick slices from the rolls. Shape these into crescents and place on the baking sheets. Bake in the oven for approximately 15 minutes. Cool on a wire rack. Melt the chocolate over a hot water bath. Fill a piping bag and decorate the crescents with it.
