Hazelnut gingerbread

Ingredients for 1 servings:

  • 200 g hazelnuts, ground
  • 100 g marzipan
  • 100 g sugar
  • 50 g orange marmalade
  • 3 egg whites
  • 1 tsp gingerbread spice
  • 1 tsp cinnamon
  • n. B. Wafers, 4 – 5 cm diameter
  • 150 g chocolate coating of your choice
  • e.g. pistachios, chopped or brittle or sugar powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes

makes 40 – 45 gingerbread cookies

Place the hazelnuts, chopped marzipan, sugar, orange marmalade, gingerbread spice, and cinnamon in a bowl and mix together. Beat the egg whites until stiff peaks form and fold in. Use 2 teaspoons to place small heaps of the gingerbread onto the wafers. Place the gingerbread on a baking sheet lined with baking paper and bake in an oven preheated to 190°C for about 12 minutes. Remove from the oven and let cool on a wire rack. Melt the chocolate coating in a hot water bath and spread it over the gingerbread, decorating as desired.
