Hazelnut stars with nougat filling

Ingredients for 1 servings:

  • 300 g flour
  • 100 g hazelnuts, ground
  • 50 g hazelnuts, chopped
  • 125 g powdered sugar
  • 1 pinch of salt
  • 1 egg(s), separated
  • 250 g butter
  • Powdered sugar for dusting
  • 1 package of nougat
  • 1 cinnamon to taste

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

makes 30 – 40 cookies

Combine the flour, ground hazelnuts, powdered sugar, salt, butter, and egg yolk to form a dough. Wrap the dough in cling film and chill for 1 hour to make it easier to roll out. Roll out the dough on a floured surface to a thickness of 3-4 mm and cut out stars. Use a smaller star cutter to cut out the center of half of the stars. Brush these stars with egg white and sprinkle with the chopped hazelnuts. Then place all the stars on baking sheets. Bake for a good 10 minutes at 200°C, or 180°C fan-assisted (note: the center-cut stars will brown faster!). Once cooled, dust the stars decorated with chopped hazelnuts with powdered sugar. Warm the nougat. If you like cinnamon, stir a little into the nougat. Then put a dollop of nougat on each star and spread it out. Immediately place a cut-out cookie on top and press it down lightly, but be careful, as the stars break easily!
