Apple, Carrot and Coconut Muffins

The perfect apple, carrot and coconut muffins recipe with a picture and simple step-by-step instructions.

  • 60 g Butter
  • 180 g Flour
  • 100 g Sugar
  • 1 tsp Cinammon
  • 1 packet Vanilla sugar
  • 2 tsp Baking powder
  • 0,5 tsp Salt
  • 2 Eggs
  • 50 ml Milk
  • 1 greater Apple
  • 2 Carrots about 150g
  • 3 El Coconut flakes
  1. Mix the butter, flour, sugar, cinnamon, vanilla sugar, baking powder and salt in a mixing bowl
  1. Mix eggs and milk in a second bowl. Mix the wet ingredients with the dry ones and everything SHORT! Mix with the whisk of the hand mixer.
  1. Peel the apples, quarter them, core the carrots, grate both roughly. Mix carefully into the batter.
  1. Finally fold in coconut flakes. Pour about 2 tablespoons of batter into each muffin well. Bake on the middle rack at 200 ° C for approx. 25 minutes. Let cool and remove from the mold. TIP: You can mix 1 tbsp chopped nuts, almonds or 60-80 g coarsely chopped chocolate into the dough.
