Healthy Chicken Stew
The perfect healthy chicken stew recipe with a picture and simple step-by-step instructions.
- 400 g Chicken meat
- 1 Red pepper
- 1 Can Corn
- 0,5 pole Leek
- 150 g Fresh mushrooms
- 3 tbsp Olive oil
- 1 L Vegetable broth
- Salt
- Pepper
- Chilli paste as you like or chilli in any other form 🙂
- Bring plenty of water to the boil in a saucepan, add a little salt. I cut the chicken into large pieces because it doesn’t have to cook that long. So cook for about 15 minutes. When the time is up, drain the water and place the meat on a plate to cool.
- In the meantime, wash the vegetables (except the corn) and cut them into small pieces. Salt and pepper a little. Heat the olive oil in another saucepan and fry the chopped vegetables vigorously. Deglaze with the broth.
- Pluck the meat into bite-sized pieces and add to the broth. Drain the corn and add it to the pot as well.
- Let everything simmer gently for 15 minutes, season with salt, pepper and spice with chilli to taste.
- It is best to serve with a fresh piece of bread. Tastes fresh and also warmed up great 🙂
