Ingredients for 1 servings:

  • 6 eggs
  • 100 g apple puree, unsweetened
  • 100 g pitted dates
  • 2 tsp cinnamon powder
  • 1 tsp gingerbread spice
  • 1 pinch of salt
  • 250 g almonds, ground
  • 250 g hazelnuts, ground
  • 200 g candied orange peel
  • 200 g candied lemon peel
  • 1 pack of wafers

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Beat the eggs until frothy. Chop the dates, candied orange peel, and candied lemon peel. Then mix all the ingredients together. Spread the batter evenly onto the wafers. This batter yields approximately 30 Elisenlebkuchen (gingerbread cookies). Place the wafers on a baking sheet lined with baking paper. Bake the Elisenlebkuchen (gingerbread cookies) at 150°C (top/bottom heat) for approximately 20-25 minutes.
