Ingredients for 3 servings:
- 300 g lamb’s lettuce
- 500 g chicken
- 1 bell pepper(s)
- 1 zucchini
- 1 can of corn
- 250 g cherry tomatoes
- 2 tbsp vegetable oil
- 4 tbsp Balsamic vinegar bianco (Crema di) or vinegar
- 4 tbsp soy sauce
- 2 dashes lemon juice
- 3 tsp cane sugar, maybe more or less
- 1 bunch of parsley
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Chop the peppers and zucchini into small pieces and the chicken into bite-sized pieces. Brown everything together with the oil (or separate the vegetables from the chicken). Meanwhile, halve the cherry tomatoes, wash and dry the lamb’s lettuce, and place everything in a salad bowl. Drain the canned corn and add it. Combine the soy sauce with lemon juice, cane sugar (or low-calorie sweetener), and balsamic vinegar and use it to deglaze the vegetable pan. Finely chop the parsley and mix in. Divide the salad among plates and serve with the vegetables and chicken bites.
