Zucchini and turkey boats

Ingredients for 2 servings:

  • 2 large zucchini
  • 2 turkey schnitzels or chicken schnitzels
  • Paprika powder
  • 2 tbsp yogurt or low-fat curd
  • salt and pepper
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

First, halve the zucchini and scoop out the insides with a spoon, cutting off a bit of the back to prevent the zucchini from sloshing around. Finely chop the zucchini insides and set aside. Place the zucchini on a baking sheet and drizzle with a little olive oil. Roast in a preheated oven at 250°C for 15-20 minutes. Mix the turkey with the spices and sear in a little olive oil in a pan. Add the zucchini insides and cook for 5 minutes. Stuff the cooked zucchini with the meat mixture and drizzle with yogurt. Garnish with some cress, parsley, or chives and serve.
