Ingredients for 4 servings:
- 100 g beans, white, dried
- Water
- 2 onions
- 2 tbsp oil, neutral, e.g. rapeseed oil
- 100 g diced ham
- 1 Cabanossi, alternatively Mettenden or Kaminwurzen
- 300 ml meat broth
- 300 g potatoes
- 1 can kidney beans, approx. 400 g
- 1 can tomatoes, chopped, approx. 400 g
- e.g. salt and pepper
- some sugar
- Crème fraîche
Instructions
Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 55 minutes; Total time approx. 13 hours 15 minutes
Soak the white beans in water overnight. Peel and dice the onions, and fry them in oil. Add the diced ham and sausage slices and let them brown. Drain the kidney beans well, peel and dice the potatoes. Add the white beans, kidney beans, diced potatoes, and tomatoes. Pour in the broth and simmer gently with the lid on for about 45 minutes, stirring occasionally. Season to taste with salt, pepper, and a little sugar. Ladle the stew onto warmed plates and serve with a little crème fraîche.
