Hearty cabbage stew Dezer style

Ingredients for 4 servings:

  • 1 head of white cabbage or savoy cabbage, approx. 1 kg
  • 1 m.-sized onion(s)
  • 2 garlic cloves
  • 4 potatoes
  • 400 g minced meat, variety as desired
  • 500 ml vegetable broth, instant
  • 3 tbsp tomato paste
  • 1 tsp, leveled caraway powder
  • 4 drops of Tabasco
  • butter
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Wash the cabbage, remove the stalk, and cut the cabbage into strips or chunks. Finely dice the onion. Chop or press the garlic. Peel the potatoes and cut them into cubes approximately 2 x 2 cm. Place the potatoes in a large pot, pour over the broth, add the caraway seeds and Tabasco, and stir in the tomato paste. Set the pot aside. Heat a pan with a knob of butter. Sauté the onions and garlic until translucent, then add a small pinch of sugar. Add the minced meat and fry until crisp. Once the minced meat is browned, season with salt and pepper. Set the mixture aside. Heat the pan again with a knob of butter and fry the cabbage until crisp. Some pieces can be darker; this will give it a roasted flavor. Now add the minced meat to the potatoes in the pot and then simply layer the cabbage on top. Cover and simmer gently over very low heat for a good 20 minutes. Stir thoroughly after about 15 minutes. You can add more seasoning at the end to your liking. You can also add a dash of soy sauce. I serve it in medium cereal bowls with a piece of baguette or crispbread.
