Hearty chestnut puree

Ingredients for 4 servings:

  • 200 g chestnuts, peeled and pre-cooked, vacuum-packed
  • 100 ml whipped cream
  • 2 tbsp cream, stiffly whipped
  • 100 ml vegetable stock or game stock
  • 1 tbsp dry sherry
  • salt and pepper

Cover and simmer pre-cooked chestnuts in 100 ml of cream and vegetable or game stock until soft. Drain, reserving the stock. Purée the chestnuts, gradually adding the stock until the desired creamy consistency is reached. Season with sherry, salt, and pepper. Fold the two tablespoons of stiffly whipped cream into the purée. Using two spoons, scoop out gnocchi or pipe rosettes with a piping bag and serve with game, goose, or duck. Brussels or red cabbage are other suitable vegetable accompaniments.
