Red cabbage à la Let's Cook

Ingredients for 4 servings:

  • 1 kg red cabbage
  • 2 apples
  • 100 g plum(s), dried
  • ½ orange(s)
  • rosemary
  • 5 tbsp balsamic vinegar
  • 1 tsp fennel seeds
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Wash the red cabbage, remove any unsightly leaves, and cut into thin strips. Peel the apples, quarter them, core them, and finely dice them. Sauté 1 teaspoon of fennel seeds with the needles from a rosemary sprig and the apple pieces in a large pot in a little oil. Dice the dried plums and add them, fry briefly, and then squeeze in the orange juice. For organic oranges, the peel can also be grated and used for more flavor. Add the red cabbage and balsamic vinegar and season with salt and pepper. Simmer over low heat with the lid tilted for 20 minutes, stirring occasionally.
