Hearty – creamy rice salad

Ingredients for 3 servings:

  • 1 cup rice
  • n. B. salt water
  • 200 g meat sausage
  • 150 g soy sprouts
  • 1 can of corn
  • 1 eggplant(s) or
  • 1 large zucchini
  • 1 cup crème fraîche
  • 1 pack of herbs (8-herb mixture, frozen)
  • 1 onion(s), if desired
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

super tasty and light, with vegetables

Cook the rice in salted water until tender. Meanwhile, dice the sausage and eggplant or zucchini. Drain the corn. Lightly fry the vegetables in a pan. Then stir in the sprouts and sausage. Season with herbs. Fold in the cooked rice. Now, evenly fold in the crème fraîche, tablespoon by tablespoon, and serve. If you like, you can also add a chopped onion.
