Hearty ham scrambled eggs

Ingredients for 2 servings:

  • 6 eggs
  • 3 slices of cooked ham
  • 1 small onion(s)
  • 1 medium-sized red bell pepper(s)
  • 100 g sour cream
  • 60 g Parmesan, grated
  • ½ bunch chives
  • salt and pepper
  • Cayenne pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Crack the eggs, whisk, and season. Dice the ham. Finely chop the onion. Deseed the bell pepper and slice into thin strips. Wash the chives thoroughly, dry them, and slice them into fine rings. Pour a little oil into a nonstick pan and heat. Add the chopped onion to the pan and fry until translucent. Pour the eggs into the onions. Add the remaining ingredients to the egg and onion mixture and stir thoroughly with a wooden spoon. Fry over medium heat until the eggs begin to set. Immediately remove the pan from the heat and “pull” the eggs into scrambled eggs. Serve immediately. Delicious with fresh bread.
