Hearty lamb's lettuce

Ingredients for 2 servings:

  • 150 g lamb’s lettuce
  • 60 g goat cheese (in one piece)
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp soy yogurt (yogurt alternative), plain, or low-fat natural yogurt
  • 30 g nuts, crushed
  • some chives, dried
  • some salt

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Wash the lamb’s lettuce thoroughly and drain. Dice the goat cheese. Whisk together the olive oil, apple cider vinegar, and (soy) yogurt. Add salt to taste and mix everything well again. Spread the goat cheese and dressing over the lamb’s lettuce. Finally, scatter the nuts and chives on top. Mix just before serving. Tip: It tastes better if the salad sits in the refrigerator for 30-60 minutes before eating.
