Hearty leek stew

Ingredients for 4 servings:

  • 3 stalk(s) leeks
  • 1 large red bell pepper(s)
  • 700 g potato(s), waxy
  • 2 cloves garlic
  • 400 g minced meat
  • ¼ liter vegetable broth
  • 3 tbsp sour cream
  • Salt
  • pepper
  • Paprika powder, or better still ground cayenne pepper
  • Herbs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, prepare the vegetables. Wash the potatoes and bell peppers and dice them. Cut the leek lengthwise and rinse thoroughly under running water, then cut into half rings. Thorough washing is very important, as sand often hides between the layers! Next, brown the minced meat in a large (!) pot and season with salt, pepper, paprika or cayenne pepper, and herbs. Add the leek and bell peppers and fry briefly. Finely chop the garlic (or use a garlic press) and add it to the pot. Add the potatoes and pour the broth over them. Cook for about 15 to 20 minutes, until the potatoes are tender. Season to taste with the sour cream and finish with salt and pepper.
