Souvlaki with tzatziki

Ingredients for 4 servings:

  • 1 kg pork steak(s), boneless
  • 1 tbsp oregano
  • 125 ml lemon juice
  • 2 cloves garlic, crushed
  • 1 tsp pepper, ground, black
  • 1 tbsp lemon juice, additional
  • 1 tbsp olive oil
  • ½ tsp salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Soak 12 15cm wooden skewers in water for about 1 hour to prevent them from burning during cooking. Cut the pork into 2cm cubes. Place the oregano, lemon juice, garlic, and half the pepper in a bowl. Add the pork steaks and stir until well coated. Cover and chill for 1 hour. In a small mixing bowl, mix the extra lemon juice with the oil, salt, and remaining pepper. Thread the meat onto the wooden skewers. Preheat the oven to full grill and grill the souvlaki for 8-10 minutes, turning once. Arrange on a platter and drizzle with the lemon mixture. Serve hot, with tzatziki on the side. Note: Marinating the meat for a few hours longer will make it taste even better.
