Hearty mushroom spread

Ingredients for 1 servings:

  • 120 g mushrooms, e.g. button mushrooms or oyster mushrooms
  • 15 g onion(s)
  • 50 ml sunflower oil
  • 125 g sunflower seeds
  • 50 ml vegetable stock
  • 2 tbsp soy sauce
  • 3 dashes lemon juice concentrate
  • 1 tsp pepper
  • 1 tsp yeast extract
  • ½ tsp salt
  • ½ tsp turmeric
  • some thyme

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

with the Thermomix

First, cut the mushrooms and onions into small cubes or strips and fry them in a pan with a little sunflower oil at medium heat for about five minutes. Meanwhile, add the sunflower seeds to the Thermomix and grind them finely using the turbo button. Add the remaining ingredients to the Thermomix and mix for about 30 seconds to one minute on speed 5. To give the spread a nice consistency, insert the butterfly into the Thermomix and mix the mixture for 30 seconds on speed 3 until frothy. Now just pour it into a jar and let it cool slightly. Then put it in the fridge or spread it straight on bread. Tip: It’s a little less savory but just as delicious without yeast extract. Just give it a try.
