Peel and wash the potatoes, and pat dry. Cut into cubes (approx. 1 x 1 cm), season sparingly with salt and pepper, and fry in a large, non-stick pan with vegetable oil until crispy. Meanwhile, peel and roughly dice the onions. Cut the smoked pork ends into strips and season with a little pepper. Remove the potato cubes from the pan and keep warm. Crumble the chili peppers. Add the smoked pork strips, diced onion, and chili crumbs to the pan and fry. Add the buttered vegetables and continue frying for about 5 minutes, stirring several times. Finally, add the potatoes and heat everything through again briefly. Arrange on plates, sprinkle with fresh herbs, and serve. If desired, refine with a dollop of crème fraîche or sour cream.
