Silesian potato dumplings

Ingredients for 1 servings:

  • 700 g potatoes
  • 200 g flour
  • 1 egg yolk
  • 3 tbsp milk
  • salt and pepper
  • nutmeg

Boil the potatoes with their skins on and peel while still hot. Mash the potatoes and add the remaining ingredients. Roll them out oblong on a floured surface (the mixture shouldn’t be too sticky; add a little more flour if necessary). Cut off small pieces and place them in plenty of boiling salted water. Let them stand. After about 10 minutes, they’ll be done and rise to the top. Remove from the water immediately, otherwise they’ll become watery, and serve. This recipe makes about 15 small dumplings. They go great with any kind of meat or simply as a main course with tomato sauce. The leftovers are also delicious cold as a small snack.
