Ingredients for 4 servings:
- 2 onions
- 2 garlic cloves
- 2 bell peppers, red
- 40 g butter
- 850 ml sauerkraut, (can)
- 2 tbsp tomato paste
- 750 ml chicken broth
- 400 g Cabanossi
- salt and pepper
- 1 pinch(s) of sugar
- Paprika powder, sweet
- 1 bunch of chives
- Cayenne pepper

Finely dice the onions and garlic. Dice the bell peppers. Heat the fat in a large pot and sauté the onions and garlic until translucent. Add the sauerkraut and sauté for about 5 minutes, stirring. Add the diced bell peppers and tomato paste and sauté briefly, stirring. Deglaze with stock, bring to a boil, and simmer covered for about 30 minutes. Thinly slice the sausage, add to the soup, and heat through. Season to taste with the spices and sugar. Sprinkle the chives over the soup and serve with hearty farmhouse bread.
