Hearty Spiced Potato Pancakes

Ingredients
 

  • 1,5 Kg Large potatoes
  • 350 g 4 onions
  • 2 piece Garlic cloves
  • 20 g 1 Red chilli pepper
  • 20 g 1 piece of ginger
  • 5 piece Eggs
  • 150 g Flour
  • 1 tbsp Salt
  • 1 tbsp Mild curry powder
  • 2 cups Sunflower oil
  • Paper towels
  • 2 Cans Apple slices

Instructions
 

  • Peel, wash and grate potatoes. Peel and grate the onions. Clean / core the chilli pepper, wash and finely dice. Peel and finely dice the garlic cloves and ginger. Put all ingredients (grated potatoes, grated onions, garlic clove cubes, chilli pepper cubes, ginger cubes, 5 eggs, 150 g flour, 1 tbsp salt and 1 tbsp mild curry powder) in a large bowl and mix well. Pour into a fine kitchen sieve so that the liquid can drain off. Heat sunflower oil (2 - 3 tablespoons) in a pan, pour in 3 small scoops of the potato mixture, press until smooth and fry the potato pancakes on both sides until golden brown. Degrease on kitchen paper and, if possible, serve hot soon with apple pieces or applesauce. Continue until all of the potato dough is used up. There were 33 potato pancakes here.
