Hearty Strudel According to Drahuse (Czech Republic)

- 2 packet Fresh puff pastry à 275 g (here: Von HENGLEIN)
- 1 Vegetable onions approx. 300 g
- 250 g Quark 40%
- 200 g Boiled ham
- 300 g Edam in one piece
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Caraway seed
- 2 tbsp Oil
- 1 Egg
- 2 tbsp Caraway seed
- 1 arc Parchment paper
- Preheat the oven to 2300 ° C. Peel and dice the vegetable onions. Dice the ham. In a bowl, mix the quark (250 g) with salt (1 teaspoon), pepper (1 teaspoon) and caraway seeds (1 teaspoon). Roughly grate Edam. Fry / stir-fry the onion cubes in a pan with oil (2 tbsp), add the ham and fry / stir-fry everything until the onion cubes are brown. Roll out the puff pastry and let it rest for a while. First put half of the quark mixture on the rolled out dough, then spread half of the onion and ham mixture and finally sprinkle half of the grated cheese over it. Carefully roll the dough up into a strudel (close the head ends), brush the upper part with beaten egg and sprinkle vigorously with caraway seeds. Do the same with the second vortex. Place the two strudel on a baking sheet lined with baking paper and bake on the middle rack in the preheated oven (200 ° C) for about 25 – 30 minutes until golden-brown. Remove and serve sliced.
