Hearty white cabbage stew

Ingredients for 8 servings:

  • 1 kg lean pork, diced
  • 5 large onions, diced
  • 1 large white cabbage, 1.5 – 2 kg, cut into bite-sized pieces
  • 300 g carrot(s), sliced
  • 750 g potatoes, peeled and roughly diced
  • 1 piece(s) celeriac, large, cleaned and roughly chopped
  • 2 tsp caraway seeds
  • e.g. vegetable broth
  • Salt
  • pepper
  • some oil for frying

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours 10 minutes

Pork stew

In a large pot, brown the pork with the onions, add the chopped cabbage, carrots, and potatoes, caraway seeds, and celery root (if you like celery, cut it into bite-sized pieces; for everyone else, fish out any large pieces at the end of the cooking time). Pour in broth until it’s about halfway up the meat and vegetable mixture, and simmer for about 1.5 hours. Stir occasionally and season with salt and pepper.
