Ingredients for 1 servings:

  • 275 g flour
  • 75 g cornstarch
  • 250 g butter
  • 1 tsp, heaped cinnamon
  • 200 g sugar
  • 1 pinch of salt
  • 1 egg white
  • 100 g brown sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

makes about 40 pieces

Melt the butter, brown, and let cool. Beat with sugar and cinnamon, then add the sifted flour and cornstarch, and knead into a dough. Wrap in foil and chill for one hour. Shape the dough into three logs and refrigerate for another two hours. Brush the logs all over with egg white and roll in brown sugar. Cut into approximately 1 cm thick slices. Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 175°C for about 15 minutes.
