Ingredients for 4 servings:
- 1 kg potatoes, floury
- 1 bay leaf
- Salt
- nutmeg
- 1 kg apples, sour
- 250 ml apple juice
- 1 lemon(s), juice
- 2 tbsp sugar
- 3 onions, cut into rings
- 1 tbsp oil
- 250 ml milk
- 50 g butter
- 2 tbsp breadcrumbs
- 200 g black pudding, sliced
- ½ bunch parsley, chopped
- Fat, for the shape
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Wash and peel the potatoes and cook in salted water with the bay leaf for about 20 minutes. Peel, quarter, core, and dice the apples. Combine the apple juice, lemon juice, and sugar in a pan and simmer the diced apples for 10 minutes. Preheat the oven to 200°C. Peel and slice the onion, then fry in hot oil. Heat the milk with half the butter. Drain the potatoes, add the milk, and mash. Season with salt and nutmeg. Melt the remaining butter and stir in the breadcrumbs. Layer the mashed potatoes and apple compote in a greased baking dish. Place the black pudding on top and scatter the onion rings over the top. Drizzle the butter and breadcrumbs over the dish and bake in the oven at 200°C for 25 minutes. Sprinkle with chopped parsley to serve. Nutritional values: E 17g F 33g KH 80g 7BE
