Ingredients for 4 servings:
- 800 g potatoes, floury
- 400 g pear(s)
- 4 tbsp butter
- 1 tbsp brown sugar
- 3 onions, cut into rings
- 100 g ham, with bacon edge, cut into cubes
- 400 g black pudding
- 100 g cream
- 100 ml milk
- salt and pepper
- nutmeg
- Water (salt water)
Instructions

with caramelized pears
Peel the potatoes and boil in salted water until soft. Peel, quarter, core, and dice the pears. Heat a little butter and sauté the pears. Sprinkle with brown sugar and let it caramelize, then remove the pan from the heat and let it rest, covered. Fry the ham cubes in a large pan with 1 tablespoon of butter until crispy and remove from the pan. Then add the onion rings to the pan and fry until crispy and brown. In the meantime, heat the cream and milk together, then press the cooked potatoes through a ricer, add the cream and milk and 1 tablespoon of butter, and mash everything. Season with salt, pepper, and nutmeg and keep warm. Mix the ham cubes with the onions, heat briefly, and push them to the side of the pan. Heat the remaining butter and fry the thickly sliced black pudding in it. Arrange the mash on a plate, scatter the caramelized pear cubes around the edges, dice the black pudding with ham, and arrange the onion rings on top.
