Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 kg apples, sour
  • n. B. onion(s)
  • e.g. salt and pepper
  • possibly nutmeg if required
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • Fat for frying

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Apples and potatoes mixed together

Peel the potatoes. Peel, quarter, and core the apples. Slice the onions. Boil the potatoes in 1 liter of water with 1 teaspoon of salt for about 30 minutes. Drain and mash with a potato masher. Cook the apples with sugar and lemon juice for about 15 minutes, until they fall apart. Then add them to the potatoes and mix. Season with salt, pepper, and nutmeg, if desired. Keep the mixture warm in the oven. Now it depends on your taste: fried onions are definitely part of the recipe. Simply fry the onion slices in a pan until golden brown, adding salt and pepper if desired. Notes: Traditionally, fried black pudding is served with heaven and earth. But because children often don’t like that, we served it with fresh bratwurst at home. I also often serve it with strips of chicken or turkey schnitzel, seasoned with spicy seasoning and fried until crispy. Vegetarians simply eat mountains of fried onions with it. Children like it without onions or “without anything.” There’s also a version with fried bacon.
