traditional, simple and delicious – apples and potatoes
Boil the potatoes in plenty of water for about 20-30 minutes, depending on whether you like them a bit chunky or not. Meanwhile, peel and quarter the apples, and remove the cores. Place them in a saucepan with a splash of water, 1 tablespoon of sugar, and a squeeze of lemon juice, and simmer with the lid on. Stir occasionally. When the potatoes are tender, drain, peel, and return them to the pan. Mash thoroughly with a potato masher. Mash the apples and add them to the potatoes. Add a splash of milk and a knob of butter. Season with salt, pepper, and a little nutmeg. If necessary, a dash of lemon juice can be added. Stir vigorously again. This goes very well with fried black pudding and/or liver sausage, onions with bacon, or simply a fried egg. Sliced bologna with a little mustard is also recommended.
