Honey cake Aunt Lyuba's way

Ingredients for 1 servings:

  • 200 g honey
  • 250 ml water
  • 120 g sugar
  • 4 eggs
  • 2 tsp gingerbread spice
  • 1 packet of baking powder
  • 125 g margarine
  • 2 tbsp oil
  • 350 g flour
  • 100 g walnuts, ground
  • 1 pack of candied orange peel
  • possibly grease for the tray

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

a honey cake that has been baked in our family in Ukraine for at least 3 generations

Preheat the oven to 180°C (top/bottom heat). Line a deep baking tray with baking paper, and either grease the edges or cover them with baking paper. Sift the flour, baking powder, and gingerbread spice into a bowl. Combine the water, honey, margarine, and sugar in a saucepan and stir briefly. Bring to a boil, then let cool. Beat 4 eggs, one at a time, into the flour mixture, along with the walnuts and candied orange peel. Pour in the cooled water-honey mixture and mix thoroughly until it forms a smooth, thick mixture. Spread this mixture evenly on the baking tray and bake for about 40 minutes.
