Ingredients for 2 servings:

  • 4 slices of whole-grain toast
  • 1 ball of buffalo mozzarella
  • 2 slices of raw ham or South Tyrolean speck
  • 4 tbsp milk or soy drink
  • 2 eggs
  • 1 tsp dried herbs, e.g. oregano and marjoram
  • 1 pinch(s) of salt and pepper
  • 1 tbsp butter
  • 1 tbsp rapeseed oil
  • 1 tomato(s)
  • 4 leaves of lettuce, e.g. Lollo rosso or bianco

Instructions

Working time approx. 6 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 6 minutes; Total time approx. 1 hour 12 minutes

Fried bread in an egg coating, hearty, easy to make

Briefly dip the slices of toast in the milk. Whisk the eggs with herbs, salt, and pepper. Place three slices of mozzarella and the roughly chopped ham between two slices of toast per person. Brush the egg mixture over the sandwiches and let them rest in the refrigerator for at least 1 hour. Heat the butter and oil in a nonstick pan and fry the bread over high heat for 3 minutes on each side. For the last 3 minutes, fry the tomato slices and sprinkle with salt and pepper. Serve everything on top of the washed lettuce leaves.
