Cod with pearl onions

Ingredients for 4 servings:

  • 4 cod fillets, approx. 150 g each
  • 300 g shallots, sweet and sour, from the jar
  • 500 g tomatoes
  • 200 g leek
  • 50 ml white wine
  • 100 ml vegetable stock
  • 1 tbsp oil
  • 1 tsp brown sugar
  • 2 tbsp lemon juice
  • 5 allspice berries
  • ½ bunch of dill
  • Cayenne pepper
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Wash the fish fillets, pat dry, and drizzle with lemon juice, season with pepper, and set aside. Drain the pearl onions and let them drain. Wash the tomatoes, pat dry, and cut into eighths. Wash, trim, and slice the leeks. Sauté the vegetables in hot oil. Add the vegetable stock, wine, sugar, and allspice and simmer for about 4 minutes, then season with salt and cayenne pepper. Place the fish fillets on top of the vegetables, cover, and sauté for about 10 minutes. Meanwhile, wash the dill, pat dry, and chop. Sprinkle the fish with dill and serve with mashed potatoes.
