Heavenly fruit clouds

Ingredients for 1 servings:

  • 150 g wheat flour
  • 2 tsp baking powder
  • 2 eggs
  • 75 g margarine, semi-skimmed
  • 67 g sugar
  • 3 tbsp milk, low-fat (1.5% fat)
  • 2 small nectarines, finely chopped
  • 1 large green apple, cut into small pieces
  • 50 g semi-sweet chocolate coating
  • 2 tbsp walnuts, preferably very finely chopped
  • 2 tsp liqueur (whisky cream liqueur)
  • Paper cups

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 48 minutes

makes 12 pieces.

Make a batter from flour, baking powder, eggs, margarine, sugar, and milk. Dice the nectarines and apple and fold in. Line a 12-hole mini muffin tin with paper baking cups. Using two tablespoons, fill the cups two-thirds full with the batter. Bake the muffins in a preheated oven at 180°C (convection oven) on the middle rack for about 18-20 minutes. Roughly chop the chocolate and melt it. Decorate the fruit clouds with it and sprinkle with walnuts.
