Ingredients for 4 servings:
- 500 g minced meat, half beef, half pork
- 2 small rolls, soaked, squeezed
- 2 egg yolks
- salt and pepper
- 1 large onion(s)
- 2 liters of broth
- ½ liter broth
- 2 sachets of sauce powder (light sauce), instant
- 1 small jar of white wine
- lemon juice
- 1 pinch(s) of sugar
- 2 egg yolks
- 125 ml sour cream
- 3 tbsp capers
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Place the minced meat in a large bowl. Add the squeezed-out bread rolls, egg yolks, salt, pepper, and the finely chopped onion, which has been lightly fried in butter. Mix everything into a meat dough and form small meatballs. Let the meatballs simmer in the gently simmering broth until cooked through (do not boil until boiling, or they will fall apart). For the sauce, bring ½ liter of the meatball broth to a boil and stir in the sauce powder. Season to taste with white wine, lemon juice, and a pinch of sugar. Mix the egg yolks with the sour cream and add to the sauce along with the capers. Heat the meatballs back up in the sauce. Variations: add finely chopped anchovies or anchovy paste to the meat dough, depending on your taste. Serve with potatoes and carrots.
