Ingredients for 4 servings:
- 500 g minced meat, half and half
- 750 g tomato pieces, fresh or tetra pack
- 1 red bell pepper(s)
- 3 garlic cloves
- 2 rolls, stale
- 3 m.-sized onion(s)
- 3 eggs
- 1 tsp mustard
- salt and pepper
- 2 tsp cornstarch
- 1 tbsp Italian herbs, dried
- 400 g cream
- 3 balls of mozzarella
- 2 tbsp margarine
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Soak the rolls in water. Preheat the oven to 200 degrees Celsius. Place the minced meat in a large bowl, squeeze in the rolls, and add them. Finely chop 2 onions and add them, along with the mustard, eggs, salt, pepper, and 1 garlic clove. Mix everything thoroughly. Grease a baking dish with 1 tablespoon of margarine. Form the minced meat into golf-ball-sized balls and place them in the bowl. Wash and trim the bell peppers and cut into small strips. Finely chop the onion and garlic and fry them in a pan. Add the bell peppers and brown for 10 minutes. Stir in the chopped tomatoes, salt, pepper, Italian herbs, and the cream in which 2 teaspoons of cornstarch have been dissolved. Mix well and season to taste. Pour everything over the meatballs. Place the sliced mozzarella on top. Bake on the middle rack for 30-40 minutes. Serve with pasta, rice, or baguette and cucumber salad.
