Heedfelder Potato Soup

The perfect heedfelder potato soup recipe with a picture and simple step-by-step instructions.

  • 600 g Potatoes
  • 1 Onion
  • 1 tbsp Butter
  • 650 ml Milk
  • 100 ml White wine
  • 0,5 bunch Chives
  • Salt pepper
  • Nutmeg
  1. Boil the potatoes until they are done, drain, allow to evaporate, peel and cut into cubes. Peel the onion and chop finely.
  2. Melt the butter in a saucepan and sweat the onion cubes in it. Add the potato cubes, sweat with them, deglaze everything with the white wine and puree.
  3. Gradually add enough milk, stirring in continuously, until the soup has the desired consistency.
  4. Let the soup boil up again, season with salt and pepper and round off with nutmeg.
  5. Wash the chives, spin dry, cut into fine rolls and stir them into the soup.
  6. Serve the soup in preheated soup bowls / soup plates.
