Heedfelder Potato Soup
The perfect heedfelder potato soup recipe with a picture and simple step-by-step instructions.
- 600 g Potatoes
- 1 Onion
- 1 tbsp Butter
- 650 ml Milk
- 100 ml White wine
- 0,5 bunch Chives
- Salt pepper
- Nutmeg
- Boil the potatoes until they are done, drain, allow to evaporate, peel and cut into cubes. Peel the onion and chop finely.
- Melt the butter in a saucepan and sweat the onion cubes in it. Add the potato cubes, sweat with them, deglaze everything with the white wine and puree.
- Gradually add enough milk, stirring in continuously, until the soup has the desired consistency.
- Let the soup boil up again, season with salt and pepper and round off with nutmeg.
- Wash the chives, spin dry, cut into fine rolls and stir them into the soup.
- Serve the soup in preheated soup bowls / soup plates.
