- 300 g butter
- 300 g sugar
- 450 g flour
- 3 egg yolks
- 1 egg(s)
- 1 packet of vanilla sugar
- 150 g chocolate or 30 g baking cocoa
- 3 egg whites
- 150 g sugar
- 250 g almonds, ground
- 250 g powdered sugar
- some lemon juice

Sift the flour into a bowl. Add the butter, sugar, vanilla sugar, grated chocolate, egg yolk, and 1 egg. Using a dough hook, knead everything until a dough forms, then shape it into a ball and refrigerate for one hour. Divide the dough into 4 equal pieces. Roll out the first piece on a floured surface, about half the size of a large rectangular baking sheet. Place the rolled-out dough on a baking sheet lined with baking paper. Beat the egg whites with a hand mixer, then slowly add the sugar. The mixture should be firm enough to slice. Then fold in the almonds. Pour the almond mixture onto the dough and smooth it down. Roll out another sheet of dough, place it over the almond mixture, and press the edges down. Repeat with the remaining dough. Bake the dough sheets for 25-30 minutes at 180°C. Mix the powdered sugar and lemon juice until you have a fairly firm glaze. Immediately after baking, cover the dough sheets with the icing and cut the pastry into long slices. Tip: If you are not so good at rolling out the dough, you can also roll out smaller sheets of dough.
