Ingredients for 4 servings:

  • 125 g flour
  • 4 eggs
  • 200 ml milk
  • 200 ml water
  • 1 tsp salt
  • 1 bunch of chives
  • 2 tbsp parsley, chopped
  • 2 tbsp butter for frying
  • Pepper from the mill
  • 50 g sprouts of your choice for garnishing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Put the flour in a bowl. Separate the eggs and whisk the egg yolks with the milk, water, and salt, then add to the flour. Mix everything together to form a smooth batter. Finely chop the chives and add them to the batter along with the parsley. Beat the egg whites until stiff and fold into the batter. Heat a little butter in a non-stick frying pan and add about 3 tablespoons of batter to each omelet. Spread the batter thinly and cook until golden brown on both sides. To serve, fold in half and garnish with pepper and sprouts.
