Ingredients for 1 servings:
- 180 g potatoes, small, triplet, new, etc…
- 20 g tarragon, dried
- 20 g pepper, ground
- Sugar
- Salt
- pepper
- butter
- 2 anchovy fillets
- Parsley, chopped
- oatmeal
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Dirklinge
Heat the unpeeled, washed potatoes in butter. Add the ground pepper and dried tarragon and sauté. Sprinkle with a generous amount of sugar and let it caramelize slightly, then toss to coat. Season with salt and pepper to taste. Add the parsley and continue to tossing. Use oatmeal to thicken the potatoes; this will bind the fat and retain the flavor. Finally, add the chopped anchovies and serve.
