Herb salad with mozzarella

Ingredients for 4 servings:

  • 200g mozzarella
  • 2 tomatoes
  • 3 spring onions
  • 1 bunch parsley, flat
  • 1 bunch of chives
  • 1 bunch arugula
  • 3 tbsp oil (olive oil)
  • 2 tbsp vinegar (white wine vinegar)
  • 1 tbsp pesto
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely slice the onion. Chop the tomatoes into small pieces, if possible. Roughly chop the arugula and parsley. Finely chop the chives. Cut the mozzarella into small cubes. Mix everything together. Combine the vinegar, oil, and pesto, season with salt and pepper. Fold into the herbs. Serve with fresh bread.
